About The Position

The Director Culinary Standards is responsible for the research and development, ongoing review, and improvement of proprietary restaurant culinary programs and platforms. This role collaborates with the Restaurant Development team to maximize growth and long-term profit through the development of menu items, culinary standards, and new product development.

Requirements

  • 8+ years of combined education and professional experience in culinary leadership and technical roles.
  • 3 years of experience leading a team in F&B operations focused on culinary program development.
  • 8 years of experience in developing and delivering culinary programs.
  • Bachelor's degree in a related field (counts for 3 years of experience).
  • MBA or master's degree in a related field (counts for an additional 2 years of experience).
  • 3-5 years of experience in Hospitality, F&B, and/or Retail.
  • Experience in culinary research and development, multi-unit restaurant operations, or new restaurant culinary development.
  • Knowledge of conceptual menu development, procurement, food safety standards, and culinary brand standards.
  • Understanding of food service industry design/construction, including oversight and management of new unit openings.
  • Strong organizational skills and experience with menu rollout.

Nice To Haves

  • Experience in managing culinary teams in a remote setting.
  • Familiarity with airport operations and culinary standards specific to travel locations.

Responsibilities

  • Develop culinary standards for new proprietary restaurant brands based on business needs and gaps in the portfolio.
  • Collaborate with internal support and external consultants to create new concept menu selections and culinary training standards.
  • Communicate ongoing proprietary culinary standards, objectives, and goals throughout the organization.
  • Review proprietary restaurant culinary standards to gauge financial results and develop strategies for optimization.
  • Support operations in achieving business goals related to proprietary culinary programs.
  • Act as a liaison and subject matter expert for all proprietary brand culinary-related inquiries.
  • Manage external culinary relationships for tactical execution based on brand strategies.
