About The Position

The Dietary Manager – Registered Dietitian directs and supervises the overall operation of Health Center Dining Services under the supervision of the Director of Dining Services in accordance with current applicable federal, state, and local standards, guidelines, and regulations.

Requirements

  • Current Registered Dietitian (RD) license required
  • Minimum five (5) years of food service experience with supervisory experience in a healthcare or long-term care setting
  • Working knowledge of CMS Conditions of Participation and F-Tag requirements (including F812 – Food Procurement, Store/Prepare/Serve – Sanitary Conditions)
  • Knowledge of Florida Administrative Code 59A-4 (Nursing Homes) and 59A-36 (Assisted Living Facilities)
  • ServSafe certification required (or ability to obtain upon hire)

Nice To Haves

  • Dietary Manager Certification preferred
  • Bachelor’s degree in Dietetics, Nutrition, Food Service Management, or related field preferred

Responsibilities

  • Maintain accurate nutrition care records of residents' diets and visitation following applicable policies as well as professional standards.
  • Develop new or improved procedures within own area of supervision.
  • Enter pertinent information in the medical records and nutritional kardexes regarding food preferences, special diet restrictions, allergies, ability to chew, diet orders and visitations.
  • Process diet changes and new diets as received from nursing and conduct dietary interviews.
  • Assume responsibility for quality assurance development, implementation, and monthly monitoring.
  • Attend Residents at Risk Meeting, care plans and other required meetings.
  • Complete comprehensive nutrition assessments, MDS's, and care plan when due.
  • Interpret laboratory values, weight trends, medication-nutrient interactions, and clinical diagnoses to determine nutritional risk.
  • Prescribe and manage therapeutic diets consistent with physician orders and evidence-based practice.
  • Address dietary concerns, food preferences, and clinical nutrition questions.
  • Evaluate nutrient analysis and recommend menu adjustments based on population needs.
  • Supervise Health Center Dining Staff in carrying out applicable items of the above duties as well as daily meal service.
  • Hire, train, coach, and evaluate staff in accordance with company policy, as well as complete biweekly payroll.
  • Develop and evaluate coordinating menus, spreadsheets and production sheets for the Health Center and Assisted Living according to Vicar's Landing, local, state, and federal regulations.
  • Develop and implement individualized nutrition care plans based on medical diagnosis and resident needs.
  • Responsible for hiring, training, and servicing staff as necessary according to Vicar's Landing and other regulatory agencies.
  • Complete all paperwork for Health Center dining employees.
  • Assure that all reviews are completed in a timely manner.
  • Complete weekly schedule.
  • Complete bi-weekly payroll for Health Center and Stratford Dining Services employees.
  • Abide by and enforce all safety and sanitation guidelines set up by the Dining Services Department, Vicar's Landing, and federal, state, and local laws.
  • Enforce and obey Dining Services attendance policy.
  • Maintain and enforce acceptable standards of personal hygiene and department dress code.
  • Reports all accidents and fills out required reports as directed.
  • Reports to work as scheduled.
  • Assist as needed with the supervisor of Assisted Living.
  • Perform all other duties assigned by Dining Services Director.
  • Perform any other related duties as required or assigned.
