About The Position

Flatrock River Lodge is seeking a full-time Certified Dietary Manager. This position is exempt and requires long-term care experience. The Certified Dietary Manager is responsible for planning, organizing, developing, and directing the overall operation of the Dietary Department in accordance with current federal and state, facility policies, standards of practice, and financial plans. This individual will work with the management team to develop and update Dietary Services' policies and procedures that reflect the philosophy and mission of the facility and accepted professional standards of nutrition and sanitation. The position will ensure that all duties performed by the dietary department comply with the standards established by the company's Quality Assurance Program. The Certified Dietary Manager will monitor staff members to ensure compliance with company, state, and federal regulatory workplace safety standards, supervise and organize food preparation and service, and work closely with nursing staff to identify possible problems concerning residents' nutritional requirements.

Requirements

  • Qualified dietitian.
  • Graduate or student enrolled in a division approved, minimum ninety (90) hour classroom instruction course in food service supervision with a minimum of one (1) year experience in institutional food service management.
  • Graduate of a dietetic technician program approved by the American Dietetic Association.
  • Graduate of an accredited college or university with a degree in foods and nutrition or food administration.
  • Training and experience in food service supervision and management in military service equivalent to the program requirements.
  • Certified Dietary Manager (CDM) credential or eligibility to test for the exam.
  • Previous experience in a healthcare setting preferred.
  • Two years of experience in institutional food service management.
  • Considerable knowledge of nutrition principles, food preparation, quantity cooking, buying, menu planning, and food costs.
  • Knowledge of applicable professional and governmental standards and regulations on institutional food service.
  • Proof of valid Certificates, Licenses, and Registrations.

Responsibilities

  • Plan, organize, develop, and direct the overall operation of the Dietary Department.
  • Develop and update Dietary Services' policies and procedures.
  • Ensure compliance with the company's Quality Assurance Program.
  • Monitor staff compliance with safety standards.
  • Supervise and organize food preparation and service.
  • Provide food substitutes of similar nutritional value when necessary.
  • Work closely with nursing staff on residents' nutritional requirements.
  • Lead and work with staff to improve procedures and quality of service.
