About The Position

We are hiring for a 12 -month Culinary Internship at The Library Restaurant, an iconic and historic fine -dining restaurant located in the heart of Portsmouth, New Hampshire, a popular tourist destination. This immersive program is designed to help you build professional cooking, kitchen management, and leadership skills in a real fine -dining environment. You’ll begin by learning U.S. fine -dining standards, food safety, sanitation, and inventory systems, then progress through hands -on training at key stations including pantry, sauté, oven, and butchery. Throughout the program, you’ll gain experience with menu development, pricing, and food cost management using tools such as Xtra Chef and Toast. In the final phase, you’ll step into a leadership role by assisting with menu rollouts, supporting staff training, and presenting a capstone menu project to the executive chef and general manager. This comprehensive internship combines culinary training with real -world kitchen operations, preparing you for a long -term career in professional fine dining.

Requirements

  • Minimum of 1 year of consistent professional culinary experience, preferably in high -volume, high end dining operations AND completed academic culinary program OR 5 years of work experience in the culinary field.
  • Ability to communicate effectively in English, both verbally and in writing.
  • Strong foundational knowledge of food preparation, sanitation, and kitchen safety practices.
  • Must be able to lift and carry items weighing over 20 pounds and stand for extended periods.
  • Ability to work efficiently in a fast -paced, team -oriented environment.
