Job Summary: Instruct inmate workers in culinary arts resulting in external certifications. Position is located at Baker Re-entry Correctional Institution, Sanderson, FL. Ensures culinary training program meets industry standards. Manage a program that prepares and serves food with the objective of operating a financially sound program. Prepare inmate workers for post-release employment. Essential Duties & Responsibilities: Responsible for the overall day-to-day operations of the Culinary Arts program. Instruct/supervise inmates on required culinary work processes. Assist inmate participants in developing the knowledge, skills, and attitudes necessary for employment through the development of certified training programs that meet PRI program needs. Conduct classroom instruction to inmate students for the required ServSafe and NOCTI sections and prepare students for successful certification exams. Account for, clean, inspect and secure equipment, kitchen appliances, and work areas to ensure cleanliness and efficient culinary operations. Comply with applicable FDC rules and regulations. Compile and maintain records of food use and expenditures. Monitor menus and spending to ensure that meals are prepared economically. Determine meal prices, based on calculations of ingredient prices. Inventory and requisition food supplies, kitchen equipment, and appliances, based on estimates of future needs. Maintain industrial cleanliness and health code standards. Operate Grayson’s Café to include all financial aspects (menu pricing, deposits, food ordering, etc.). Be a ServSafe and NOCTI certified proctor to administer tests to the culinary students.
