About The Position

Luther Park Community is seeking a customer focused individual to provide a positive dining experience for our residents, guests, visitors and employees in our Community. Luther Park Community is known for its excellence in understanding and meeting the needs of our elderly and aging population, especially in the area of Dementia care. The dietary team supports this mission through superior meal time service, healthy snack options, special holiday meals, catered events, Board of Director functions and employee appreciation meals. It is the mission of the Dietary Department to serve all who enter the Luther Park Community with kindness and quality. Job Summary: The Foodservice Director maintains overall responsibility for the quality, compliance and service of all food related functions held on the Luther Park Community campus or on behalf of Luther Park Communities. The Director provides leadership and guidance for the department, hires/trains/evaluates personnel, sets and manages budgetary expenses and assists the Registered Dietitian with resident diet management.

Requirements

  • Graduate of 2 or 4 year Dietary Manager’s, Dietetics or Nutrition Program
  • Five years’ experience in foodservice management. Prior healthcare foodservice management experience preferred
  • Must possess Certified Dietary Manager’s Certification or willing to obtain w/in 6 months of hire for accreditation of work in Luther Park’s Trinity Center
  • Must possess ServSafe Manager’s Certification or willing to obtain w/in 6 months of hire for accreditation within all Luther Park buildings
  • Must be able to read, write and communicate fluently in English
  • Must be able to effectively lead department staff while simultaneously managing resources, budgets and menu fulfillment program of the department
  • Must follow all safety procedures while on Luther Park campus or while performing tasks for Luther Park Communities
  • Must know, follow, train, enforce and monitor all food safety regulations
  • Must be willing to accept work responsibilities as pertains to a business that operates 24 hours a day, 365 days a year

  • Stand, sit, bend, walk for extended periods of time
  • Work around foods and cleaning supplies throughout the day

Responsibilities

  • Write and update policies and procedures as needed for the Culinary Department
  • Interview, hire, train, coach, evaluate, reward, discipline and when necessary, terminate employees
  • Maintain job descriptions, schedules, training plans, task list, equipment and systems for each position
  • Build and manage budgets for all foodservice lines of Luther Park Communities for cost containment
  • Authorize purchase of foods, chemicals, equipment and supplies
  • Justify capital needs and propose annually to Finance
  • Work cooperatively with residents, facility staff, consultants, vendors and other service providers while exhibiting strong communication and customer service skills with each interaction
  • Able to multi-task and/or manage time effectively to meet expectations and deadlines
  • Create HACCP guide for storing and preparing foods per menus and standardized recipes
  • Participate in menu planning, resident preferences, substitution lists, therapeutic diets and food trends
  • Audit meals to assure standards are met for appearance, palatability, temperature and service
  • Create, update and audit kitchen sanitization checklists and safety practices
  • Process new diet orders and changes and keep diet cards updated
  • Assist with completion of assigned MDS sections within timelines
  • Determine resident needs and develop plan to accommodate within RD recommendations and doctor orders
  • Review and offer updates to resident care plans and participate in care plan meetings
  • Support registered dietitian duties as needed
  • Ensure quality meals, service and code compliance for all culinary functions throughout campus
  • Willingness to be flexible, adapt as needed and work under pressure
  • Ensure staff are valued, appreciated and respected through on-going feedback and annual reviews
  • Schedule and execute team meetings and trainings to fulfill regulation and staff need

  • Be aware of the happenings in your department, anticipate needs, trouble shoot and resolve problems
  • Be accountable for all areas of the Culinary Department, working with team to minimize weaknesses and ensure overall success
  • Keep current with required CEU trainings, in-house training requirements and trade knowledge
