Job Overview Ebenezer is looking for a Culinary Director to join our team at Terralume of Minnetonka in Minnetonka, MN! This position is responsible for overseeing all dining services operations and ensuring that meals are prepared and presented in accordance with applicable regulations and customer expectations within each community under their oversight. This nutrition leadership schedule includes; 80 hours every two weeks Full time; Day/ Early Evening shifts Weekends as needed

Requirements

• One to three years of previous experience
• Performance Management Skills
• Working knowledge of basic Microsoft applications
• Certified Food Protection Manager (CFPM) (must be issued by State of Minnesota for locations in the state of MN) within 90 Days
• Certified Dietary Manager
• Food Protection Manager Certification/ Issued by an ANAB-CFP accredited food sanitation program
• Drivers License
• Current drivers license in good standing

Nice To Haves

• Vocational/Technical Training or Associate Degree - Food Service
• Four + years of previous experience

Responsibilities

• Oversees all aspects of dining services operations within communities, ensuring compliance with corporate menus while managing inventory, budgets, and online ordering processes, including purchase orders and invoicing.
• Plans and develops weekly menus, supervises food preparation with strict adherence to sanitation and safety standards, and makes necessary substitutions for residents' dietary needs.
• Prepares high-quality food by following standardized recipes, ensuring proper cooking temperatures, accurate ingredient measurements, and correct portioning for consistency in quality and nutritional value.
• Prepares texturized diets in compliance with the International Dysphagia Diet Standardization Initiative (IDDSI), educating and auditing team members for adherence to IDDSI standards, and maintaining rigorous quality control to ensure all modified diets meet required guidelines.
• Hire, train, and supervise dining staff by providing clear expectations, ongoing feedback, timely performance reviews, and fostering teamwork through coaching, cross-training, and collaboration to build an engaged, high-performing team that delivers exceptional service.
