The Cook at Brookridge Retirement Community performs a variety of routine tasks and operations to prepare and cook food items for meal service, adhering to standard practices and procedures in compliance with facility and regulatory agency requirements. This role is responsible for the efficient operation of the department and may involve supervision of dietary staff. Key duties include reviewing menus, assembling food supplies and equipment, and following recipes to prepare assigned menu items. The cook will adjust thermostat controls for various cooking equipment such as ovens, broilers, grills, roasters, and steam kettles, and will be responsible for baking, roasting, broiling, and steaming meats, fish, vegetables, and other foods. They must observe and test food for quality by tasting, smelling, and piercing to ensure it is cooked according to standard recipes. The position also involves preparing a range of menu items using kitchen equipment like kettles, deep fryers, and pressure steamers, and following instructions for batch cooking to ensure efficient operation of tray-line, dining room, and other service areas. The cook participates in monitoring food quality, temperature, and accuracy, and assists with setting up food items on patient/resident tray-lines and other food service areas. Administrative tasks include accurately recording statistics for production systems and completing record-keeping forms such as substitution logs, temp-sheets, daily logbooks, and sanitation sheets, as well as correctly using a time clock. Maintaining proper care, maintenance, sanitation, and safety is crucial, which includes detecting and reporting spoiled food or supplies, and alerting supervisors to problems concerning equipment, food supply, sanitation, and safety. The cook must comply with established department policies, procedures, objectives for quality assurance, safety, and infection control, attend all required department meetings and in-services, and participate in educational programs to improve skills. They are expected to comply with the retirement home's conduct policy and all federal, state, and local regulations, including those related to civil rights and disabilities. Cleaning assigned areas, supervising kitchen employees as needed, assisting in training new employees, and immediately reporting equipment breakdowns are also part of the job. The role requires practicing a "clean as you go" policy, safely using cleaning agents, and working cooperatively with residents, families, visitors, and staff while maintaining confidentiality of resident care information and ensuring resident rights and safety.
