About The Position

Purpose of the Cook 1 (Lead) Be able to work in a fast-paced environment and demonstrate excellent leadership, organizational, communication, and time management skills.

Requirements

  • Must have excellent communication and organizational, time management, and leadership skills
  • Extensive familiarity with the following equipment (training provided) Fryer, char broiler, flat-top, hot-well, wok station, steamers, convection oven, walk in cooler and freezer, assortment of knives, mandolin, etc.
  • Ability to work as part of a team
  • Sound knowledge of food health and safety regulations
  • High School diploma or equivalent
  • Must be at least 18 years old
  • Working in a high volume kitchen for at least 2 years
  • This position must have, or an ability to acquire within one year, an in-depth knowledge and thorough understanding of company policy and procedures, state regulations, and technical rules relevant to their responsibilities
  • Must possess the ability to obtain a Minnesota Racing Commission gaming license

Responsibilities

  • Following instructions of the Executive Chef and Sous Chefs
  • Preparing orders quickly and efficiently to menu spec
  • Rotates inventory and ensures freshness of product at all times
  • Refill items that require prepping and make sure stations are stocked
  • Ability to prepare all recipes pertaining to current food menu.
  • Possess thorough knowledge of the current menu items for all stations
  • Use creativity with specials.
  • Knowledgeable on all equipment and how to clean them
  • RTI filtering fryers on a consistent basis
  • Ensure setup for the following shift is complete
