About The Position

An amazing opportunity to be a pivotal part of the pre-opening for the next great Omni convention collection hotel. Opening in early 2021, the Omni Oklahoma City Hotel will be a true outdoor recreation, entertainment and culinary destination paying homage to the heritage and modern progress of the city. With 605 guest rooms and suites, the luxury hotel will showcase views of the 70-acre Scissortail Park and the downtown skyline with 75,000 square feet of meeting and event space, sports bar, specialty restaurant, coffee shop and a retail venue. The Production Cook 1 will work with assistance of plated/ prepared dishes in the outlet. Maintain consistency and quality at all times. Help maintain proper sanitation and safe food handling procedures throughout Omni Oklahoma City Hotel outlet kitchens. Lead by example culinarian.

Requirements

  • Required to have at least 4 years culinary experience in a hotel or restaurant kitchen.
  • Must be able to work efficiently without needing immediate supervision from management.
  • Great working knowledge and fluidity of all line stations including but not limited to: Sauté, Grill, Pantry and Fry Station.
  • Must have a solid understanding of major cooking and preparation principles i.e. sauté, braise, roast, poach, bake, steam.
  • Should have the ability to make from scratch stocks, sauces, vinaigrettes, coulis, puree’s and soups.
  • Must understand a la minute preparation.
  • Must be able to multi-task and keep on track at all times.
  • Serve Safe certification preferred, and or a good understanding of all local health department requirements for safe food handling and sanitation standards.
  • Basic math skills needed to understand and implement recipes and measurements.
  • Good eye/hand coordination needed to use all kitchen equipment and professional cutlery.
  • Must be able to work a variety of shifts, including, days, nights, weekends and holidays.
  • Maintain a professional culinary appearance, attitude, and performance.
  • Must have the ability to multi-task in a fast pace environment.
  • Must be able to truss or tie certain whole proteins, work through most recognized industry knife cuts, i.e. small dice, brunoise, julienne etc…
  • Must have the ability to reasonably fabricate some cuts of beef, pork, seafood, round and flat fish.
  • Move, bend, lift, carry, push, pull, and place objects weighing up to 40 pounds without assistance.
  • Stand or walk for an extended period or for an entire work shift.
  • Requires repetitive motion.

Nice To Haves

  • Culinary School or Vocational School Degree or certificate preferred.

Responsibilities

  • Independently prepare all food items as directed by supervisor and to the company specifications.
  • The ability to identify and Inspect all food products for quality.
  • Follow all storage procedures when taking food out of walk-in and when returning food to walk-in.
  • Safely and properly use all culinary equipment.
  • Must have a solid and demonstrated understanding of cooking skills and techniques.
  • Keep walk-in, prep area and equipment up to Health Department and EcoSure standards at all times.
  • Attend department meetings and other company required trainings.
  • Complete other duties as assigned by management.
