About The Position

The Cook position at UC San Diego involves preparing a variety of hot and cold menu items for customers, ensuring adherence to established quality standards and procedures. Requirements

  • One year of experience as a cook in a large restaurant, hotel, or complex healthcare facility.
  • Ability to prepare and coordinate food orders for timely delivery.
  • Demonstrated knowledge of food and food products.
  • Ability to perform duties in food and plate preparation, including plating and garnishing.
  • Proven skill in quality food production across various stations.
  • Ability to maintain a clean and organized kitchen area at all times.
  • Knowledge of health department codes and sanitation policies.
  • Superb customer service skills.

Nice To Haves

  • Food Handler's Card/Certification.
  • Ability to efficiently scratch cook with meats, fish, vegetables, soups, and sauces.
  • Experience in all stations with proficient knife skills.
  • Ability to take directions and work as part of a team.

Responsibilities

  • Prepare menu items in advance of serving and to order for cafeteria, tray-line, and special functions according to standardized recipes.
  • Perform meat fabrication, fish cutting, and sauce making.
  • Assume full responsibility for the quality of products served.
  • Maintain a clean and sanitary work station area, including all kitchen equipment.
  • Follow proper plate presentation and garnish setup for all dishes.
  • Close the kitchen properly and assist others in closing the kitchen.
  • Attend all scheduled employee meetings and bring suggestions for improvement.
  • Perform other related duties as assigned by the Executive Chef, Sous Chef, or manager-on-duty.
