About The Position

Pinkbox Doughnuts is seeking an experienced Commissary Manager to lead our high-volume, 24/7 central production facility supporting multiple retail locations. This role oversees approximately 60–80 employees across multiple shifts, including production supervisors, warehouse personnel, sanitation teams, dispatch leadership, and delivery drivers. This is not a bakery manager role. This is a large-scale food production and logistics leadership position. The Commissary Manager is accountable for production execution, labor efficiency, food cost control, regulatory compliance, and on-time delivery performance.

Requirements

• 7+ years managing high-volume food production or commissary operations
• Experience leading 50+ employees across multiple shifts
• Proven labor modeling and cost control experience
• Strong food safety and regulatory compliance background
• Experience overseeing logistics or dispatch operations
• Ability to lead through layered supervision and build strong teams

Nice To Haves

• Doughnut experience is a plus but not required.

Responsibilities

• Lead 24/7 food production in a high-volume commissary environment
• Ensure accurate forecasting, yield control, and quality standards
• Eliminate production bottlenecks and inefficiencies
• Ensure complete and accurate fulfillment for all locations
• Build and maintain structured multi-shift leadership
• Align staffing levels to production demand
• Control overtime and labor performance
• Develop supervisors and enforce accountability standards
• Manage theoretical vs. actual usage
• Oversee inventory counts and variance analysis
• Enforce FIFO and waste reduction systems
• Partner with Finance on reporting and cost control
• Oversee dispatch scheduling and routing efficiency
• Manage driver performance and fleet accountability
• Ensure accurate and on-time delivery to all locations
• Ensure full compliance with local health department regulations
• Maintain documented sanitation systems
• Lead inspections and corrective actions
• Standardize SOPs and operational processes
• Maintain preventative maintenance schedules
• Implement KPI tracking and reporting systems
