Requirements

  • High school diploma or equivalent preferred.
  • 1-2 years of culinary experience, preferably in a hotel, resort, or upscale dining environment.
  • Solid understanding of cold food preparation and presentation techniques.
  • Strong knife skills and attention to detail.
  • Ability to work in a fast-paced environment while maintaining high standards.
  • Must be able to work a flexible schedule, including mornings, evenings, weekends, and holidays.
  • Valid Food Handler's Certification (or ability to obtain upon hire).
  • Ability to stand for extended periods and lift up to moderate weight.
  • Creativity in presentation and plating.
  • Familiarity with Garde Manger and banquet prep techniques.
  • Strong communication and teamwork skills.
  • Knowledge of allergens and dietary restrictions (e.g., gluten-free, vegan options).

Responsibilities

  • Prepare and plate cold menu items such as salads, charcuterie, canapés, dressings, and cold desserts with consistency and precision.
  • Follow established recipes, portion controls, and presentation standards.
  • Assist in the setup and breakdown of the cold station before and after service.
  • Maintain cleanliness, organization, and sanitation of all cold prep areas, storage, and equipment.
  • Ensure proper food handling, labeling, and storage procedures, including FIFO and temperature control.
  • Assist with banquet prep and execution for events requiring cold dishes or displays.
  • Collaborate with other kitchen stations to ensure timely and smooth service.
  • Monitor inventory and communicate low stock or product needs to supervisors.
  • Support hot kitchen stations or other duties as needed during slower periods or peak hours.
  • Maintain a positive and professional demeanor while working in a team environment.
