Requirements

  • We require a background of five years' progressive culinary experience and three years of culinary management experience. Preferably in a high-volume resort environment.
  • Ability to prepare a wide range of dishes across different cuisines and stations.
  • Basic knowledge of P&L, labor control, & food cost/recipe costing.
  • Demonstrate flexibility by stepping in where needed to provide hands-on support to teams, maintain service excellence, and ensure seamless execution during high-volume and peak periods.

Nice To Haves

  • A culinary degree is preferred but not required.

Responsibilities

  • Rotate Across Outlets: Fill in at various kitchens as needed, ensuring smooth operations and consistent food quality.
  • Food Prep & Cooking: Prepare, cook, and plate menu items according to recipes, portion standards, and presentation guidelines.
  • Support Events & Banquets: Assist with high-volume production for conventions, group events, and special resort functions.
  • Quality & Safety: Maintain food safety, hygiene, and sanitation standards, while monitoring ingredient freshness.
  • Team Coordination: Communicate with chefs and staff, help train junior cooks, and adapt quickly to kitchen needs.
  • Inventory & Equipment Oversight: Assist with stock management, equipment uses and reporting shortages or malfunctions.
