About The Position

The Chef at Hard Rock Casino Rockford is responsible for overseeing kitchen operations, including meal planning, food procurement, and staff supervision. This role aims to enhance the dining experience for guests while ensuring compliance with health and safety standards. The Chef will also be involved in menu development and cost management to achieve profitability while maintaining high-quality food service.

Requirements

• 5 years of culinary experience in a 4-star or 5-star establishment.
• High school diploma or GED required; culinary school or equivalent preferred.
• Previous supervisory experience in a kitchen environment.
• Strong organizational skills and budgeting experience.
• Knowledge of food products, standard recipes, and proper preparation techniques.

Nice To Haves

• Experience opening new properties or outlets is preferred.

Responsibilities

• Create an inviting atmosphere for guests to enhance their gaming experience.
• Hire, train, motivate, evaluate, and supervise kitchen staff to ensure they meet established objectives.
• Supervise all food outlets and kitchen personnel to maintain quality standards.
• Plan menus based on market conditions and guest preferences.
• Check food preparation methods, portion sizes, and garnishing by tasting.
• Procure food supplies and kitchen equipment from approved suppliers, ensuring quality.
• Ensure proper storage of food items to comply with health requirements.
• Collaborate with catering sales to create and adapt special menus for clients.
• Track food cost variances and adjust prices to ensure profitability.
• Attend meetings and complete assigned follow-ups.
• Maintain cleanliness and sanitation of work and public spaces.
