About The Position

Sodexo Senior Living is seeking a Chef Manager for our dining operations at Garden Spot Village, a large upscale continuing care retirement community located in New Holland, Pennsylvania. Garden Spot Village is situated in beautiful Lancaster County which was named one of the top 10 places to retire in the U.S.! This is a showcase account with high attention to details in retail and innovation in food and exhibits a culture of Be Kind, Do Good, Love Others. The Chef Manager is a hands-on position and will cook daily, often working stations. Will oversee the food production serving approximately 300 meals per period (lunch and dinner) for independent living residents. Will report to the General Manager and will assist with managing up to 20 employees per shift. Typical shift will be 11:00am -8:00pm, may vary with every other weekend coverage and some holidays.

Requirements

• Strong culinary knowledge.
• Catering experience.
• Understanding of forecasting, food cost management, purchasing, inventory.
• Ability to successfully lead, develop and train a team.
• Proficient computer skills as well as exceptional organizational skills.
• Servsafe certified.
• Working knowledge of HACCP and experience with Health and Safety audits.

Responsibilities

• Implement and standardize all culinary systems and procedures: Catering, menus, garnishing, panning charts, production, puree standardization, FMS sheets, inventory control, HACCP, cleaning schedules, staffing plans, presentation and quality of food, kitchen cleanliness, safety, etc.
• Be responsible for Food and Physical Safety and annual training for all hourly associates.
• Conduct Gold Check audits, create action plans based on audit findings.
• Keep and update GC audit books.
• Improve and standardize catering and banquet services.
