About The Position

The Chef Garde Manger at Loews Hotels & Co. is a pivotal role within the culinary team, responsible for overseeing all aspects of cold food preparation in a high-volume, upscale environment. This position requires a thorough understanding of food production techniques and a commitment to maintaining the highest standards of quality and presentation. The Chef Garde Manger will ensure that all food served meets the established criteria for quality and is prepared in a timely manner, ready to delight guests at the Loews Miami Beach Hotel, a recently renovated South Beach icon. In this role, the Chef will supervise the Pantry/Prep personnel, ensuring that the work area is organized and equipped with all necessary supplies. The Chef will oversee the preparation and production of all cold food items, including the inspection and rotation of food products to guarantee freshness and quality. Adherence to standardized recipes is crucial, and the Chef will assist the team in the preparation and storage of raw food products prior to final assembly. The Chef will also monitor the plating of cold foods to ensure compliance with established presentation guidelines, utilizing various kitchen equipment safely and effectively. The Chef Garde Manger will promote teamwork and communication within the kitchen, addressing any issues promptly and maintaining a positive work environment. This role requires a commitment to cleanliness and safety, ensuring that all equipment is in excellent condition and that the kitchen complies with all safety regulations. The Chef will also participate in hotel meetings and training sessions, staying current with hotel information and changes, and adhering to uniform and grooming standards.
