About The Position

The Chef de Partie's primary role is to oversee the preparation, cooking, and presentation of food in their respective section of the dinner kitchen operation/menu. Participate in daily kitchen prep work and station set-up prior to service and maintaining the highest quality food preparation standards and adhering to recipes and directions. Works with the Chefs to maintain standards and deploy new dishes per specifications. Works with Chefs to prepare and execute any events. Picks garnish as needed from the JUSTIN garden and communicates product needs to farmstead team. Preparing seasonal ingredients to Chef Team’s specification and follows directions to ensure consistency and highest levels of quality. Prepares proteins in a safe and sanitary way to ensure food safety and adherence to local food safety regulations. Works pantry station at dinner service ensuring station is set up pre-service and maintains cleanliness throughout service. Works with the Team Member mentality as part of a greater team.

Requirements

  • 2+ years fine dining culinary experience.
  • Exceptional attention to detail and passion for food and wine.
  • Culinary degree preferred.
  • Serv-Safe Certified.
  • Demonstrated strong ability to work well under pressure.
  • Ability to establish direction, obtain commitment, and execute appropriate logistical processes.
  • Comfortable dealing with guests and purveyors on a daily basis.
  • Must thrive in a fast-paced working environment.
  • Have a calm and approachable demeanor.
  • Superb time management and organizational skills.
