About The Position
Marbled & Fin is seeking a skilled and passionate Butcher to join our team and help lead one of Charlestons most exciting dining destinations. About Us: Marbled & Fin is expanding from its celebrated Charleston roots to downtown Savannah as the concept's second location, joining The Neighborhood Dining Group portfolio (Husk, Delaney Oyster House, Minero, and The James). Known for its vibrant energy and modern approach to the steakhouse, Marbled & Fin creates a lively yet polished setting for both everyday dining and special celebrations. Team members will be part of bringing this exciting new restaurant to Savannah, offering premium cuts of beef, the highest quality seafood, and expansive wine list, and a standout whiskey and spirits collection. Who We're Looking For: You are comfortable multitasking and prioritizing their job duties and are skilled in large scale food production and refined plating techniques. Experience with quality and production control as well as the storage of meat and fish desirable.
Requirements
- Minimum 1+ years of butchery experience, ideally in fine dining or whole-animal operations
- Deep understanding of meat, poultry, and seafood cuts
- Skilled with a variety of knives, saws, and butchering equipment
- Committed to excellence, efficiency, and cleanliness
- Team-oriented with clear communication and a strong work ethic
- Passionate about ingredient integrity and classical culinary technique
Nice To Haves
- Experience with quality and production control as well as the storage of meat and fish desirable.
Responsibilities
- Execute expert butchery of whole animals, fish, and primal cuts to meet precise menu needs
- Uphold rigorous safety, cleanliness, and HACCP standards at all times
- Assist with inventory management, ordering, and sourcing guidance
- Ensure consistency in portioning and yields, minimizing waste
- Support daily prep and special tasting menus with accuracy and finesse
