About The Position

As a Butcher in one of our meat departments, you will have the opportunity to produce high quality meat cuts and seafood products for our customers. Requirements

  • Butcher Level 1 Requirements ($21.15 / hour)
  • Prior meat department or culinary education or experience, as outlined below:
  • A minimum of 1 year full time (2,000 hours) experience as a clerk in a meat department; OR
  • A minimum of 1 year full time (2,000 hours) experience in protein fabrication for food service/restaurant (e.g., breaking down whole poultry, portion-cutting, fileting fish, grinding and sausage making, etc.); OR
  • Completion of 1 year (or equivalent) of a full-time formal education or training program in butchery, meat cutting, culinary arts, or a related field; OR
  • An equivalent combination of education and experience as outlined above
  • Butcher Level 2 Requirements ($22.55 / hour)
  • At least 2 years of experience as a Butcher
  • Knowledge of grades of meat
  • Requirements for Both Levels 1 and 2
  • Knowledge of HACCP plan and Servsafe principles

Responsibilities

  • Cut, trim, bone, tie, and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking form
  • Shape and tie roasts use a boning knife and twine
  • Cure, smoke, tenderize and preserve meat
  • Assure a safe, efficient, and clean meat department, adhering to safety and cleanliness standards.
  • Stay abreast of industry trends, natural and organic practices, recalls and warnings
  • Order product using SMS as needed, working with the Meat Manager to maintain proper inventory levels
  • Adhere to proper receiving protocols that ensure delivery quality and accurate quantities per invoice
  • Complete inventory and enter product loss into SMS according to established procedures and time frames
  • Maintain effective working relations with suppliers
  • Work closely with the Logistics staff to ensure accurate data management including inventory numbers, ingredients, recipes and correct pricing
  • Assist as needed with daily operations, routines, and procedures. Record quantity of meat received and issued to cooks and keep records of meat transfers.
  • Effectively use all department equipment
  • Comply with all laws, rules and regulations pertaining to the meat department
  • Assist with preparations for Wisconsin Department of Agriculture, Trade and Consumer Protection and other inspections
  • Maintain daily temperature and production logs accurately
  • Greet and offer assistance to customers
  • Treat people fairly, consistently and with respect
  • Know product locations in order to assist customers in finding what they need throughout the store
  • Abide by all Co-op policies and procedures as outlined in the Employee Handbook and other company documents
  • Participate in required training and meetings
  • Perform all other duties as assigned by a supervisor
