SUMMARY The Butcher ("Carnicero/a") ensures consistency of the product and maintains proper storage; maintains inventory; portion control and maintains safe food handling standards. Provides a product of high quality and value is consistently achieved. Contributes to the overall success of all culinary operations.

Requirements

  • At least 3 years of relevant experience and/or training.
  • Strong understanding of meat cuts, yields, and portion control.
  • Availability to work on weekends and holidays is required.
  • Must be able to attain a valid San Diego County Food Handler certification upon hire. Evans Hotels will provide this training and is to be completed at the company’s expense.
  • Ability to always maintain a friendly, professional, team-oriented, positive demeanor and diplomatic attitude, especially under stress or challenges.
  • Ability to stand, kneel, squat for prolonged periods of time, up to and including, the entire shift and lift up to 100 lbs.
  • Availability to work on weekends and holidays is required.

  • Previous similar position in a hotel, or as a butcher or meat cutter in a restaurant or butcher shop preferred.

Responsibilities

  • Receive, inspect, and properly store meat, poultry, and fish upon delivery, ensuring quality and safety standards are met.
  • Prepare and portion a variety of meats including steaks, chops, poultry, fish, roasts, stew meat, and ground meat using knives and powered equipment such as grinders and choppers.
  • Cut, trim, bone, tie, and grind meat using butcher’s tools and equipment.
  • Follow specific recipes, portion guidelines, and verbal instructions with accuracy.
  • Read and execute production based on butcher prep lists and Banquet Event Orders (BEOs).
  • Maintain accurate inventory of products and practice proper rotation and labeling to minimize waste.
  • Uphold safe food handling and sanitation procedures in compliance with health department regulations.
  • Clean and sanitize all butcher equipment, tools, and workstations before and after each shift.
  • Communicate effectively with kitchen team and management regarding product needs and concerns.
  • Performs additional duties and responsibilities as directed by the leadership team.
