About The Position

We have an opening for a full time BUTCHER position at Restaurant Associates located at CxRA - 33-51 62nd Street, Woodside, NY 11377. This position involves cutting, trimming, and preparing meat for use in food production or sale in retail establishments. Requirements

• Previous butcher experience is required.

Responsibilities

• Cuts, trims, and prepares meat for use in food production or sale.
• Works directly with supplier representatives to determine order details and price.
• Receives, inspects, and stores meat in accordance with food safety and sanitation standards.
• Records and tracks quantity of meat received and issued to cooks.
• Estimates requirements and orders or requisitions meat supplies to maintain inventories.
• Cuts, trims, bones, ties, and grinds meats such as beef, pork, poultry, and fish.
• Cures, smokes, tenderizes, and preserves meat.
• Maintains sanitation and orderliness of all equipment and work areas.
• Handles food items with safety regulations in mind during preparation and service.
• Prepares and places meat cuts and products in display counter.
• Prepares custom cuts of meat as ordered by customers.
• Shapes, laces, and ties roasts using boning knife, skewer, and twine.
• Wraps, weighs, labels, and prices cuts of meat.
• Totals sales and collects money from customers.
• Performs other duties as assigned.
