The Bus Person and/or Dish washing Person is responsible for setting up the restaurant for lunch or dinner. During the shift, the bus person clears and wipes down tables and chairs, and sweeps the floor. The dish person operates a dishwashing machine to clean dishes, pots, pans, and other utensils used by employees and customers.
