About The Position

The Broiler Cook position at our Pala, CA location is a vital role within the culinary team, operating under the guidance of the Chef De Cuisine/Room Chef and/or Sous Chef. This position is responsible for supporting both culinary management and hourly staff in the daily operations of the BMG kitchen. The Broiler Cook must adhere to Health Department regulations and Pala's standards for food service, ensuring quality, freshness, and presentation in all culinary offerings. The role requires a commitment to delivering the highest quality food and service, which includes planning, preparation, setup, and cooking of various food items. The Broiler Cook will be involved in preparing meats, poultry, and seafood, as well as appetizers, salads, entrees, soups, sauces, and seasonal specials, all in accordance with departmental quality standards and specifications. In this position, the Broiler Cook will set up the broiler station, ensuring all food preparation equipment, plateware, and food items are ready for service. The role involves maintaining recipes and flavor profiles, supervising kitchen operations during service periods, and ensuring that all food is seasoned, cooked, and plated to meet quality standards. The Broiler Cook will also be responsible for maintaining sanitation and food safety throughout their shift, monitoring kitchen areas for compliance with health codes, and reporting any violations immediately. This position requires effective communication with team members and a commitment to maintaining a safe and organized work environment.
