About The Position

The Breaker Quality Control Technician is responsible for ensuring that all food safety, quality, and regulatory standards are strictly followed throughout the egg-breaking process at Hickmans Egg Ranch. This role involves monitoring adherence to HACCP, SQF, GMPs, SOPs, and SSOPs, performing quality checks, documenting findings, and conducting product testing. The Breaker Quality Control Technician plays a critical role in maintaining food safety standards, implementing corrective actions, and supporting continuous improvement in quality control.

Requirements

  • Experience in quality control, food safety, or a related role within food production, preferably in egg or dairy processing.
  • Strong understanding of HACCP, SQF, GMPs, SOPs, and SSOPs in a food production environment.
  • Excellent attention to detail and ability to accurately document findings and complete reports.
  • Ability to perform various tests, such as pH, ATP, and microbiological testing, and understand test results.
  • Good communication skills for coordinating with sanitation, production, and quality assurance teams.
  • Proficiency in maintaining accurate logs and tracking supplies to support continuous operations.
  • Strong problem-solving skills to identify and address food safety hazards promptly.
  • Basic computer skills for logging data and completing quality assurance documentation.
  • Ability to stand, walk, and move around production areas for extended periods.
  • Must be able to lift and carry up to 30 pounds.
  • Frequent bending, stooping, and reaching to access equipment and perform inspections.
  • Comfortable working in a production environment with exposure to varying temperatures and noise levels.

Responsibilities

  • Monitor and enforce compliance with HACCP, SQF, GMP, SOP, and SSOP standards to ensure all food safety and quality requirements are met.
  • Communicate any deficiencies identified during SSOP checks to the Sanitation Department and document corrective actions.
  • Document and complete Quality Production Assurance checks on Pre-op Forms, ensuring accuracy and completeness.
  • Verify scale accuracy and check logs throughout the plant, ensuring all maintenance logs are current and correctly dated.
  • Conduct QA walks periodically to monitor: Food safety or quality issues Safety compliance Proper use of PPE Adherence to all policies and procedures
  • Execute various tests, including pH, ATP, and microbiological testing, to ensure product quality.
  • Monitor temperatures at all critical points to maintain quality standards.
  • Pull samples from each lot produced during the shift (minimum of 3 samples per lot/run) and maintain composite samples for library and testing purposes.
  • Log all QA testing and complete the Daily QA Log accurately.
  • Track lab supplies, ensuring all items are in stock with at least a two-week supply and verifying expiration dates.
  • Document and inspect customer returns, reworks, and findings for accuracy and completeness.
  • Send Certificates of Analysis (COA) to customers as needed.
  • Conduct monthly visual inspections and may be asked to assist with plant food safety inspections.
  • Identify food safety hazards and initiate corrective actions for any non-conformities, documenting all actions taken.
  • Support the development, implementation, and monitoring of food safety programs.
  • Assist with team training as needed, providing guidance on quality control procedures and standards.
  • Communicate any deficiencies or areas of concern to the quality control team and management.
