About The Position

EOE/AA/Disabled/Veterans Waldorf Astoria is looking for a Banquet Sous Chef to join the Culinary Team at this gorgeous Atlanta property! Located in one of Atlanta's most prestigious neighborhoods, this 42-story tower has 127 rooms (plus residences), over 10,000 square feet of meeting space, and 3 food and beverage outlets. This includes the 3-meal restaurant, bar, and in-room dining. In this role, you will support the Executive Chef in overseeing the culinary operation in banquets. Want to learn more? As Banquet Sous Chef, you will work closely with the Executive Chef to manage aspects of the banquet kitchen to deliver an excellent Guest experience. You will also be required to manage food provisions, assist with guest queries, and control costs. Specifically, you will be responsible for performing the following tasks to the highest standards:

Responsibilities

  • Manage all aspects of the banquet kitchen including operational, quality and administrative functions.
  • Prepare foods as outlined in the Banquet Event Orders.
  • Create and implement menu selections for special banquet themes and events based on current food trends and regional tastes in partnership with the Executive Chef and Director of Food and Beverage.
  • Control costs without compromising standards, improving gross profit margins and other departmental and financial targets.
  • Ensure the consistent production of high-quality food through all hotel food outlets.
  • Manage the provision of food and take action where necessary to ensure compliance with current legislation.
  • Assist in positive outcomes from guest queries in a timely and efficient manner.
  • Support brand standards through the training and assessment of the Team.
  • Manage the banquet kitchen brigade effectively to ensure a well-organized, motivated Team.
  • Monitoring and developing team member performance to include, but not limited to, providing supervision, conducting counseling and assisting with evaluations, training, scheduling and assigning work and delivering recognition and reward.
  • Assist other departments wherever necessary and maintain good working relationships.
  • Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards.
  • Report maintenance, hygiene and hazard issues.
