BANQUET SOUS CHEF – ISLA BELLA BEACH RESORT JOB SUMMARY Isla Bella Beach Resort, a luxury oceanfront resort in the Florida Keys, is seeking a talented and motivated Banquet Sous Chef to join our culinary leadership team. This role partners closely with the Executive Chef to lead banquet and catering operations, delivering exceptional food quality and presentation for weddings, events, and group functions. The ideal candidate is a strong leader who thrives in a fast-paced environment and is passionate about creating memorable culinary experiences.

Requirements

  • Minimum of 3+ years of culinary experience in a hotel, resort, or banquet environment
  • Previous Sous Chef or supervisory experience preferred
  • Strong leadership and team development skills
  • Experience with high-volume banquet and catering production
  • Knowledge of food safety and sanitation standards (ServSafe or equivalent required)
  • Ability to work in a fast-paced, high-volume environment
  • Strong organizational and time management skills
  • Flexible schedule including evenings, weekends, and holidays

Responsibilities

  • Support the Executive Chef in overseeing banquet kitchen operations and team performance
  • Lead and supervise culinary staff during banquets, weddings, and special events
  • Ensure all dishes meet quality, consistency, and presentation standards
  • Assist with menu development and execution for banquet and catering events
  • Oversee food preparation, plating, and timely execution during high-volume events
  • Train, coach, and develop kitchen team members
  • Maintain proper food safety, sanitation, and kitchen standards
  • Manage inventory, ordering, and cost control to support budget goals
  • Ensure proper use and maintenance of kitchen equipment
  • Step in to cook and support operations as needed during peak service
