Requirements

  • High School diploma or equivalent. Culinary degree preferred.
  • Eight (8) years culinary experience. Five (5) years of banquet food execution and management experience is required.
  • Able to work flexible schedule based on the needs of the business. Must be able to work evenings, weekends and holidays as required.

Responsibilities

  • Oversee the planning, preparation, and execution of all banquet food operations; maintain full responsibility for banquet culinary performance.
  • Supervise, hire, train, schedule, coach, evaluate, and administer progressive discipline for culinary staff in accordance with Human Resources policies.
  • Collaborate with event planners to understand client preferences, dietary requirements, and event specifications.
  • Ensure all food quality standards established by the Corporate Executive Chef are consistently met.
  • Schedule all back-of-house staff according to business demands.
  • Develop banquet menus, including recipe creation, specifications, portion control, costing, and presentation standards.
  • Monitor purchasing and requisitioning of all food and non-food items.
  • Establish and maintain kitchen par levels and inventory controls.
  • Review and manage inventory and sales reports to ensure operational efficiency.
  • Monitor and control payroll costs.
  • Attend weekly Food & Beverage meetings.
  • Resolve guest and client concerns related to banquet food.
  • Maintain cleanliness and enforce food safety standards in compliance with local, state, and OSHA regulations.
  • Promote outstanding customer relations.
  • Able to lift and carry 50 lbs. frequently.
  • Able to stand/walk for 6 to 8 hours.
