The Banquet Chef at Harvard University is responsible for coordinating, planning, and supervising the production, plating, and presentation of food at all banquet events and dining rooms. This role is crucial in ensuring that all food is prepared in a cost-effective and safe manner, meeting or exceeding customer expectations to attract future business. The Banquet Chef will control food and labor costs, ensuring the appropriate quantity of food is prepared while adhering to safety standards and city regulations. In the absence of the Executive Chef, the Banquet Chef will assume their responsibilities, supervising and training banquet cooks and culinary staff, monitoring performance, and managing schedules. The Banquet Chef will produce orders for all banquet functions, maintain accurate food production sheets, and write menus and create recipes for all banquet and catered functions. This includes utilizing and maintaining a computerized food program and maintaining a recipe database. Compliance with bargaining unit agreements is essential, and the Banquet Chef will provide appropriate progressive discipline when necessary. Knowledge of taste profiles for all scheduled recipes is required, ensuring that the culinary staff prepares products in compliance with set taste and presentation profiles. The Banquet Chef will attend meetings to address all culinary aspects of upcoming events and conduct daily meetings for the culinary staff, working to meet the mission and core values of The Faculty Club with enthusiasm and cooperation. Maintaining sanitation standards in compliance with city and state laws, as well as Harvard Environmental Health and Safety regulations, is a critical part of this role. The Banquet Chef will ensure that all HACCP logs are completed accurately and stored correctly, complying with the Food Employee Illness Policy. The cleanliness and sanitation of the entire back of house, including kitchens, storerooms, and common areas, must be maintained according to The Faculty Club's standards. The Banquet Chef will also complete general administrative duties accurately and on time, along with other assigned duties.
