About The Position

As a member of the Culinary Team, this position will prepare Viennoiserie and specialty items according to the menu and Executive Pastry Chef in large and small quantities. Assist the Head Baker, Assistant Baker and Jr. Sous Chef as necessary. Follow direction of the Executive Pastry Chef and Head Baker in maintaining the highest standards of food quality, taste, and production. Requirements

  • Apprenticeship or culinary school graduate; at least one year experience in a full-service pastry shop preferred.
  • Prior experience operating deck and convection style ovens, dough rounders, dividers, sheeters and mixers of a commercial/industrial size required.
  • The employee is occasionally required to lift/pull/push up to 50 pounds and will be working in conditions that are both inside and outside at times.
  • Enthusiastic, friendly, and energetic team member who works well with others.
  • Strong interpersonal communication skill

  • Additional preferred abilities include: ability to consistently shape multiple styles of bread by hand, working knowledge of lamination techniques and knowledge of proper baking times and temperatures to ensure that all products are thoroughly baked.

Responsibilities

  • Precisely follows portion control, presentation of food, consistency of food, and flavor as determined by the culinary department.
  • Checks coolers for proper rotation of food items to prevent spoilage.
  • Ensures adequate amount of product is on hand and lets supervisor know what to order; advise chef when food inventory is depleted.
  • Prepare all items as specified in areas working in and in a timely manner
  • Maintain a clean, organized, and sanitary work area following safety guidelines.
  • Follow all hotel and kitchen policies and procedures.
  • Must be able to understand and adjust recipes according to business levels.
  • Maintain a working knowledge of properly storing, rotating, and maintaining products.
  • Must be able to maintain ServSafe and health department standards.
  • Maintain comprehensive preparation and knife skills.
  • Ability to check and complete mise en place and pars to set-up the station.
  • Prepare and service all food items for a la carte and/or buffet menus according to hotel recipes and standards.
  • Prepare food so that quality, taste, and appearance of food is in accordance with Broadmoor standards.
  • Maintain walk-in coolers and food storage areas daily.
  • Ensure workstation and all equipment is clean and sanitized prior to the change of shift.
  • Ensure outlined prep is completed in a timely manner for the next shift.
  • Ability to focus attention on guest needs, always remaining calm and courteous.
  • Must be able to run a station independently.
  • Willingness to work in a fast-paced, team-oriented environment
