About The Position

The culinary baker is responsible for the proper preparation, set up and execution of all bakery products. The bakery work in this position must all follow Dining's commitments to sustainability and proper health and safety guidelines. The role requires excellent presentation skills and the ability to distinguish flavors and textures, as well as professional interaction with other employees, customers, and suppliers. The baker must perform quality work within deadlines, work effectively as a team contributor, and communicate and coordinate work efforts with other employees and organizations. The position also involves cleaning work areas, equipment, and utensils, ensuring compliance with sanitation and safety requirements, preparing and finishing desserts, and setting up food for service. This position does not directly supervise anyone but is responsible for working in a team and completing tasks in a group setting.

Requirements

  • Strong passion and motivation to create great food.
  • General culinary knowledge of basic kitchen practices, protocols, and procedures.
  • 2 year Associate Bakery degree plus 2 years of equivalent experience working in a high volume bakery kitchen, or 4 years of equivalent experience working in a high volume bakery kitchen.
  • Understanding of typical culinary units of measure.
  • Ability to work safely and efficiently with large volume bakery equipment including but not limited to grill, fryers, steamers, tilt skillets, rotary ovens.
  • Ability to meet Dining unit specific uniform standards for this position.
  • Utilize all Personal Protective Equipment per dining guidelines.
  • Wear a cut resistance glove whenever using a sharp or potentially sharp tool or instrument.
  • Ability to follow all Dining's health and safety standards and requirements.

Responsibilities

  • Prepare and finish desserts for the retail outlet.
  • Prepare and finish gluten free desserts for retail, students, and banquets.
  • Utilize approved food production standards to ensure proper quality, serving temperatures, and standard portion control.
  • Prepare and finish menu and yields set by the Chef.
  • Set up breakfast cart for the next morning and communicate with Chef regarding any changes or substitutions.
  • Set up lunch and dinner desserts with appropriate garnishes as per bakery guidelines.
  • Clean work areas, equipment, and utensils, and distribute supplies and portable equipment.
  • Ensure compliance with all sanitation, ServSafe, and safety requirements.
