About The Position

The Sous Chef is responsible for the successful operation of the kitchen in the Garden Restaurant, thus contributing to the overall success of Moody Gardens. POSITION AUTHORITY: The incumbent is authorized to take reasonable action necessary to carry out assigned duties and responsibilities, provided such action is consistent with position guidelines as outlined below. POSITION GUIDELINES: Position guidelines include, but are not limited to, established company and department policies and procedures and all supervisory directives. The incumbent is expected to exercise sound, reasonable judgment and initiative, and give high priority to accuracy and details in the performance of job responsibilities.

Requirements

  • Bachelor’s Degree in related field or equivalent experience
  • Ability to obtain any government required licenses or certificates
  • CPR certification or First Aid training preferred
  • Must obtain TABC & Food handlers Certification before beginning work
  • Must be reliable and responsible
  • Ability to speak Spanish preferred
  • Good working knowledge of accepted standards of sanitation
  • Basic mathematical skills necessary to understand recipes, measurements, requisition amounts, and portion sizes
  • Ability to operate kitchen equipment such as stoves, ovens, kettles, mixers, and other kitchen equipment
  • Ability to grasp, lift, carry, or otherwise move or push goods on a hand cart weighing a maximum of 200 pounds at a time at a continuous schedule
  • Ability to perform duties in confined spaces
  • Ability to perform duties within extreme temperature ranges
  • Finger/hand dexterity to operate food machinery

Responsibilities

  • Coordinate all food production needs and food presentation operations of the Garden Restaurant
  • Ensure the production of high quality food for the Garden Restaurant as well as all other food outlets of Moody Gardens
  • Maintain a high quality image through effective housekeeping, maintenance and sanitation in areas of responsibility
  • Maintain and evaluate existing food concepts and development of creative new food concepts which insure the highest quality food and profitability
  • Operate within the budgeted guidelines, maintaining food cost percentages
  • Responsible for all equipment and inventory control
  • Train new employees as well as coordinate internal training and developmental programs when appropriate
  • Implement and support control procedures with the department
  • Coordinate food production and presentation with other Moody Gardens management (such as Catering Manager and Restaurant Manager) when appropriate
  • Schedule kitchen staff to meet kitchen responsibilities
  • Ensure good safety practices of kitchen employees and assist in the maintenance of proper emergency and security procedures
  • Assist Executive Chef with all kitchen operations
  • Estimate daily production needs on a weekly basis communicate production needs to kitchen personnel daily
  • Supervise and coordinate activities of cooks and workers engaged in food preparation
  • Operate in compliance with all Local, State and Federal laws and governmental regulations
  • Any other duties as assigned; duties are subject to change as management deems necessary to best serve the needs of Moody Gardens
