About The Position

The Timber at Holly Branch is a boutique hotel located in Gatlinburg, TN. The hotel’s on-site restaurant, Stillhouse, offers a variety of casual dining options and drinks The Assistant Manager is responsible for supporting daily kitchen and bar operations, leading and assisting staff, maintaining service and quality standards, and ensuring an exceptional guest experience throughout the inn. The Assistant Manager must embody The Timber’s values by making guests feel welcome and valued through a visible, engaging presence and by helping create a warm, inviting atmosphere. This is a full-time position. Free employee parking is available on-site!

Requirements

  • Previous experience in kitchen leadership, lead cook, supervisor, or assistant manager role (required).
  • ServeSafe Certification or willing to obtain within 60 days of employment (required).
  • Valid ABC Permit or willing to obtain within 60 days of employment (required).
  • Must be at least 18 years old (required).
  • High School Diploma (required).
  • Experience working in both BOH and FOH environments, including bar support or service exposure.
  • Ability to step into operational roles as needed (kitchen, bar, service, or guest assistance).
  • Strong guest service skills with a hospitality-first mindset.
  • Proven ability to lead, train, and motivate staff in a fast-paced environment.
  • Experience assisting with inventory management, ordering, and cost control.
  • Comfortable supporting special events, seasonal volume, and peak tourism periods.
  • Strong communication and problem-solving skills.
  • Ability to remain calm and organized under pressure, especially during high-volume service.
  • Flexible availability, including nights, mornings, weekends, and holidays.
  • Must be able to bend, stoop, climb stairs, twist, kneel, lift, push, and pull items weighing up to 55 lbs.
  • Must be able to stand and move throughout the workday.
  • Must be willing to work outdoors and in varying weather conditions

Nice To Haves

  • Background in restaurant, resort, or lodge setting (preferred).
  • Previous bartending experience (preferred).

Responsibilities

  • Supervise, mentor, and support kitchen staff to promote a positive, efficient, and professional work environment.
  • Assist with daily kitchen operations, stepping in as needed to ensure quality, consistency, presentation, and food safety standards are met.
  • Maintain a clean, organized, and sanitary kitchen and bar workspace in compliance with all health and safety regulations.
  • Monitor kitchen and bar equipment, reporting maintenance or repair needs to management in a timely manner.
  • Provide cross-department support in both the kitchen and bar, assisting during peak service periods or staffing gaps to ensure smooth operations.
  • Help maintain consistent food and beverage standards across all service areas.
  • Assist with inventory tracking, product ordering, proper storage, and efforts to minimize waste and control costs.
  • Provide friendly, professional guest assistance and respond promptly to questions or service concerns, escalating issues to management when appropriate.
  • Help create a welcoming, “at-home” atmosphere that encourages repeat visits and positive guest experiences.
  • Foster teamwork and collaboration across kitchen, bar, and inn operations.
  • Participate in meetings and training sessions with leadership to align on goals, standards, and priorities.
  • Support overall facility cleanliness, including shared kitchen, bar, and Stillhouse areas.
  • Take a proactive, hands-on approach to daily operations and support ongoing improvements to kitchen, bar, and service processes.
  • Encourage creativity, efficiency, and new ideas that enhance both operations and the guest experience.
