About The Position

The Assistant Butcher is responsible for the daily production of meats, poultry, fish, patties and sausages in the butcher shop.

Requirements

  • Candidates must be able to communicate in English fluently. 2nd language a plus.
  • Must be able to read and follow recipes.
  • Must be able to complete basic mathmatical calculations.
  • Requires a minimum of 5 years prior Butcher experience, preferably in a high-volume hotel environment.
  • Candidates must exhibit accurate knife skills and extensive butcher knowledge, including seafood.
  • Candidates must be able to work in a refrigerated productions environment.
  • Requires the ability to work within a team environment.
  • Must be able to obtain and maintain any licensing or active work cards required, at present or in the future, for this position at all times

Nice To Haves

  • Formal butcher training/apprenticeship preferred, but not required.

Responsibilities

  • Responsible for cutting, curing, slicing, yielding, and weighing of all butcher shop products for the hotel and the proper labeling and storing of products.
  • The Assistant Butcher is also responsible for portion and quality control.
  • Conducts product inventories.
  • Guides and trains trainees.
  • Responsible for maintaining the cleanliness and sanitation of work areas and equipment in accordance with Health Department standards.
