About The Position

The Captain position at Ortikia Mediterranean Grill involves providing exceptional service in a fine dining environment. Requirements

• Minimum of 2 years experience in food and beverage service in a four diamond resort or fine dining setting.
• Ability to obtain required work cards for the jurisdiction.
• Effective communication skills with guests, team members, and management in both written and verbal form.
• Demonstrated leadership skills and sound judgment.
• Ability to manage time effectively with minimal supervision.

Responsibilities

• Memorize and execute the required sequence of service and ordering steps with a friendly and professional attitude.
• Pronounce the entire wine list and menu items accurately.
• Conduct beverage and wine service techniques, including decanting wine and refilling beverages appropriately.
• Perform French service and implement fine-dining food serving standards.
• Memorize and accurately describe all menu items, including preparation and ingredients.
• Make appropriate meal/beverage pairing recommendations and utilize suggestive selling techniques.
• Accurately enter menu items ordered in the POS system in the correct sequence.
• Serve food and beverages using both hand and tray service methods.
• Observe and anticipate guests' needs, checking on them regularly.
• Ensure the section is clean and free of debris, maintaining visual contact with the entrance.
• Complete assigned side work and additional daily tasks.
• Exercise sound judgment and decision-making skills when handling guest and team member situations.
