As the Sous Chef at Real Sports Bar & Grill, you support the Executive Chef, Head Chef and Chef de Cuisine in the daily operation of a high-volume, fast-paced kitchen while maintaining exceptional food quality, consistency, cleanliness, and team performance. The ideal candidate is a hands-on leader who thrives in a dynamic sports and entertainment environment, demonstrates strong culinary skills, and is committed to delivering an outstanding guest experience. You lead by example, supervise kitchen staff, ensure adherence to food safety standards, and help drive operational excellence during both regular service and major event days. Your leadership, passion, and commitment to teamwork contributes to inspiring others, ensuring MLSE's quality service and safety standards are upheld, and the key objectives of the Food and Beverage department are met.

Requirements

  • Journeyman’s Cooks Papers (or equivalent in practical experience).
  • 2-3 years culinary supervisory experience within a high-volume catering operation and restaurants.
  • Experience in food costing and menu development.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Thorough understanding of food safety and sanitation regulations.
  • Experience in large quantity cooking and high-volume line expediting.
  • An ongoing awareness and responsiveness to client satisfaction.
  • Exceptional interpersonal, presentation and communication skills, where building a rapport comes naturally.
  • Proficient in MS Office and Restaurant POS.
  • Understanding of Industry business principles.
  • Available to work evenings, weekends, and holidays as required.
  • A winning attitude.

Responsibilities

  • Assist in leading all back-of-house culinary operations.
  • Schedule staff according to current CBA guidelines.
  • Assist with ordering, receiving and inventory management.
  • Ensure all menu items are prepared and presented according to brand standards and recipes.
  • Maintain consistency, quality and execution during high-volume service periods.
  • Support menu development, seasonal features and recipe testing as directed by Executive Chef, Head Chef and Chef de Cuisine.
  • Assist in managing sales revenues and operating expenses effectively.
  • Assist with recruitment, onboarding, training and performance development.
  • Actively participate in all relevant Real Sports Bar & Grill and MLSE departmental meetings.
  • Assist with other related functions as assigned by Executive Chef, Head Chef and General Manager.
