As an integral part of the Corporate Product Team, the Head of Salumi & Formaggi (SAFO) manages the success of Eataly North America’s buying categories - salumi, formaggi, and dairy - through executing procurement strategy, assisting in selecting the product offerings, overseeing catalog development and maintenance, inventory and forecasting management, building producer and vendor relationships, identifying product opportunities, market trends, and ensuring product assortment is in line with sales and margin goals. Reports to the Director of Fresh, manages the Category Manager of Salumi, Formaggi, and Dairy, and works closely with adjacent fellow heads of categories and other corporate and in-store departments.
