About the position

The Kitchen Manager Apprentice position at Hershey Entertainment & Resorts Company is designed to provide comprehensive supervisory and management training in culinary operations. This apprenticeship focuses on developing skills in guest service, restaurant leadership, and overall kitchen management, in collaboration with the National Restaurant Association Educational Foundation (NRAEF). The apprentice will gain hands-on experience by rotating through various locations within the Hersheypark Entertainment Complex, including Chocolatier and Devon Seafood & Steak.

Responsibilities

  • Achieve proficiency in culinary skillset competencies and hospitality skills as directed by chefs.
  • Assist in the delegation of production duties for employees preparing and serving food.
  • Assist with scheduling, training, and development of the culinary team through coaching and motivating.
  • Cook and prepare menu items according to guest requests, including special dietary requirements.
  • Ensure compliance with recipes, presentation standards, and food safety procedures.
  • Label, store, and inventory products and supplies, rotating products as needed.
  • Maintain knowledge of menu offerings to accurately answer guest questions and provide recommendations.
  • Order and maintain food production inventories based on pars set by Sous Chef.
  • Assist with cleaning and organization of the kitchen and storage areas.
  • Perform other duties as assigned.

Requirements

  • Must be 18 years of age or older.
  • Completion of high school or GED.
  • Valid driver's license required.
  • Pass pre-screening for the Apprenticeship Program by the Pennsylvania Restaurant & Lodging Association.
  • Obtain ServSafe Allergen, ServSafe Handler, and other required training and certifications.

Nice-to-haves

  • Basic knowledge of knife skills and cooking techniques.
  • Understanding of inventory control and requisitions.
  • Ability to read and follow standardized recipes in English.
  • Strong interpersonal and verbal communication skills.
