The position involves determining how food should be presented using the Banquet Event Order (BEO) and creating decorative food displays. Responsibilities include preparing special meals or substitute items, assisting with banquet plate-ups, and communicating any assistance needed during busy periods to the Chef. The role requires ensuring proper portion, arrangement, and food garnish, as well as monitoring the quality and quantity of food prepared and served. Additionally, the position entails preparing proper plate and platter presentations for banquets, setting up and operating action stations for banquets or buffets, and carving buffet meats as requested by guests. The individual will support banquet and buffet operations by ensuring adequate stock of all items and will operate various kitchen equipment to prepare foods. The role also includes preparing ingredients for cooking, following recipes, and maintaining quality and presentation standards.
