Under direct supervision of the Sous Chef, provides supervision and coaching to all Food & Beverage staff. Assists in all menu creation, labor control, and food cost control, scheduling, ordering and procurement of food/product and daily operations of all food venues. Must have extensive knowledge of Title 4 (Arizona liquor law). Works efficiently in a team based environment and must follow Tohono O'odham Gaming Enterprise (TOGE) alcohol training as well as all TOGE internal controls, consistently.
